An update, and sourdough improvements

My last IMK post mentioned I was having some problem with my starter. Lorenzo still isn't back to his former glory, but he is producing loaves with a bit more lift now. Perhaps the warmer weather here in Australia is helping. I've been experimenting with using the fridge to rise the bread, and I'm getting some ok results. The first time I did it, I didn't realise that I should have shaped the loaves before popping them in the fridge, so they lost a bit of air when I pulled the bowl out and shaped. These loaves turned out a bit better - I used polenta on the outside which gave them a nice crunchy crust. I'm loving the sourdough experimentation and different techniques I pick up from various books and blogs.
One of those loaves came along on a weekend away with us. We rented a little holiday apartment with a kitchen up at Caloundra. It's not a long drive, but I find that travelling with kids is always best if I can minimise disruptions to their routine, and give them plenty of distractions. We had a concert (Lah-Lah's big live band for any parents in the know) to go to at 10am which is a bit of a witching hour for my toddler. With an early nap, I figured he'd be fine so we decided to stay up there and let him nap at the apartment first rather than driving up on the day to have him strung out and exhausted instead of grooving to the music!

Anyway, the kids loved it - the concert and the apartment. We stayed within walking distance to the beach. On one of our wanders we saw this pelican swimming along the boardwalk. I was sad to see that it had a fishing hook embedded in its throat and the line wrapped around it's neck. It was swimming near the fisherman along the boardwalk, hunting for little bait scraps and the fish they were trying to catch. I guess I know how it got that hook!
Travelling with children is also exhausting as it's not their own space so we were constantly entertaining them. Much coffee was consumed.

Ellie recently turned four. I can't really wrap my head around the fact that I have a child who is four. The years feel like they have just flown by... and yet gone so slowly too! She insisted that I make her cupcakes to take to daycare and share with her friends. I was not allowed to make my own cakes, they must be the Finding Dory mini cupcake mix that she had spied on the shelf at the store. Since it was her day, I capitulated, but in an act of defiance (and sympathy to the children with food allergies in her class) I used Nuttelex and apple puree instead of butter and eggs. By all reports they were a hit. I'm quite taken with the edible wafers included in the pack; apparently they are made with potato starch.
One of Ellie's favourite presents was this hula hoop. I admit we have all had a bit of fun with it actually, but she is getting very good at it (although watching her learn to hula was an absolute hoot!)
We came home from our mini getaway to find the hens and hounds overjoyed that we had returned. My garden, while dry, seems to have come along in leaps and bounds. I'm especially chuffed that this little nasturtium seed that I threw into a empty pot has suddenly leapt taller and sprouted several new sets of leaves (although something has been munching on one).
I love mini holidays, and every time we do one I promise myself they'll happen more often. Here's to getting away from things for awhile!

Easter exhaustion and the house of sick

Oh hello there! It's been awhile I know. A combination of a couple of long weekends in a row, followed by us becoming the house of sick on our return from the Easter long weekend away. I'll get to that.

Like last year at Easter, we got on a plane and went to visit Ellie's grandparents. It was a great holiday, so great, that we decided to repeat it again this year! It was a lovely trip, I mean, it's hard to wake up to this kind of view, but someone has to do it! Also, flying with a toddler is very different to flying with an infant (somewhat easier, and in other ways, so much harder too!). Moving on...

Easter views
There was lots of fun had. We visited relatives, ate a lot, took Ellie out on her first boat trip (she slept in my arms the entire way there and back!), swam in the pool, went to the beach and collected shells, and generally enjoyed ourselves not being at work. As usual, Ellie was spoiled mightily with chocolate and Easter goodies (including a certain pair of bunny pyjamas). Did I mention food? Well, it deserves a second mention because there was a lot of it. There might have been quite a bit of napping to be done as well... although I feel vain enough to need to point out that that is an iPhone cable under my head, not a massive grey hair streak.

Mr Fork being mysterious as usual
When we got back home, we were all a little off colour. I wrote it off to post holiday blues and put us all to bed. The next day however saw Mr Fork and Ellie packed off to the doctor post haste. Turns out, Ellie and Mr Fork both had tonsillitis. Mr Fork got glandular fever on top of that. The pharmacist was quite tickled to be making up matching daddy/daughter antibiotics. I only had a viral infection so no antibiotics for me. I say only with the utmost sarcasm, because I felt like death too, but as the least sick of the family, it was my job to do all the looking after. I've been so tired I could sleep for a week! Luckily, everyone is on the mend now, but my sanity and temper certainly suffered for awhile there.

It's either the terrible twos starting, or the fact that she's been sick, but Ellie has been off temper a bit too. After throwing an epic tantrum one day, her room suddenly went silent so I checked on her, only to find her asleep behind the door wrapped in her beloved blanket. I just had to take a picture of her it was that cute. She was so comfortable (even snoring) that I just let her sleep where she was instead of risking a mid nap move.

Floor naps
Speaking of that blanket, have I ever mentioned how much Ellie loves it? It's the texture she finds comfort in I think, as we have a similar smaller blanket for the car that has the same feel but a different colour. Being sick, she's been wanting blanket with her everywhere when we're home, and no matter how hot the day, if we're in the car, that one has to be draped over her legs too. I'm going somewhere with this.

I took her shopping during the week last week so that Mr Fork could have a break and get some rest. I was walking dead myself, but hopefully he'll remember what I did and return the favour one day. We were in Myer looking at the pyjamas when all of a sudden Ellie squealed with glee and disappeared into a rack of clothes. I found her in a rack of pink fluffy jackets, which looked and felt just like her blanket, rubbing them over her face. Then, I kid you not, she tore a jacket off it's hanger and started carrying it around the department, rubbing it on her face and sucking her thumb. There were tears when I refused to buy it for her but honestly... I just don't see myself wearing something like that EVER. I felt like the meanest mama in the world! Just look at those sad, sick eyes.

Sick, but still cute
How was your Easter break? I hope not as unhealthy as ours!

Getting centred

Sometimes, you just need to dip your toes into the ocean and reconnect with what is important.

It’s been a bit of a stressful few days. Nothing specific I can pinpoint to blame really, but lots of little things just adding up. Ellie is going through a rough patch lately. She’s not sick but something isn't quite right. She is sprouting a lot of teeth at the moment and threw the biggest tantrum I have ever seen. I don't think it was entirely a tantrum however, she just woke up distraught from a nap and couldn't calm herself. It was awful, lots of screaming and the usual aids of teething gel, panadol, cuddles, offering milk or iceblocks did not help. She eventually just wore herself out, after almost 15 minutes of constant screaming and I kept having to say to myself that "she's not giving me a hard time, she's having a hard time". It’s been my mantra of late. It was really hard for both of us. I was walking around with her, holding her and reassuring her and she just couldn't regulate herself, poor thing. I had to leave day care with instructions at drop off all last week that if she did it again and couldn't calm down for them then to please call me and I would leave work. No phone calls but they did say she was very cranky and upset.

The dreaded surname issue has come up again. I like my name, I'm very happy to keep it, but this doesn't sit well with other people sometimes. Discussions probably got more heated than they needed to be, but if Mr Fork and I have no issues, I don't see that it is anyone else's business. Just because it might make things easier, doesn't mean that it's right (for me).

I've been getting some terrible headaches lately. Probably a bit stress related, but also due to bad posture too (I'm working on that!). After an emergency dash to the chemist, I walked out with a giant pack of generic panadol (for a mere $1.95, score!), and the thought that there has to be a better headache remedy. Can anyone recommend something more natural? I put out the Facebook call as well so feel free to comment there.

Anyway, back to connecting with what is important. To me, it’s my family. Making sure they are looked after and happy. Then, sadly in terms of priority, looking after me and making sure I’m looked after and happy. Those at the things that are important. Not what anyone else thinks, or even how I think they think! Sometimes it takes getting away and dipping your toes in the ocean to help ground you and figure out what matters.

How do you centre yourself when things are getting hectic all around?

Beach getaway

Over the recent long weekend, Mr Fork had a boys' night scheduled, so instead of staying home alone, I decided to take Ellie on a road trip up the coast to visit my aunt for a few nights.

It was really lovely for Mr Fork to have some man time, but I think I was the real winner getting a happy, snuggly toddler all to myself. We shared a room there, so in the mornings, she would wake and I would lift her into bed with me for some quiet snuggles (and to allow everyone else to get a little more sleep before loud toddler shrieks of joy rocked the house!).

We went to the beach and explored. Although a real water baby in the pool, Ellie was not too impressed with the waves and much preferred the sensation of sand on her toes I think.

We explored local markets and my aunt bought Ellie a gorgeous little sundress.

There was also lots of food consumed (and not just by Ellie!). Tapas and wine was had.

Farm fresh figs.

I think Ellie could get used to a holiday lifestyle, with soy babycinos (I discovered she's not so good with cow milk babycinos!) and almond croissants for breakfast!

How did you spend the long weekend?
